Charred Prosciutto Wrapped Asparagus Spears
You can adapt this recipe for however much asparagus and prosciutto you like! The flavors are distinctive and amazing with only a dash of pepper.
Place asparagus on a sheet of waxed paper; coat with cooking spray. Sprinkle with pepper; turn to coat. Wrap a prosciutto piece around each spear; secure ends with toothpicks.
Grill, uncovered, over medium heat until crisp, about 3-4 minutes on each side. Discard toothpicks.
Spicy Za'atar Grilled Eggplant
Ingredients:
2 eggplants, sliced into 1/2-inch rounds
2 tbsp olive oil
2 tbsp za'atar
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp garlic powder
Salt and pepper
Lemon wedges (for serving)
Fresh parsley, chopped (for garnish)
Instructions:
Sprinkle eggplant slices with salt, let sit 15 mins, then pat dry.
Mix olive oil, za'atar, paprika, cayenne, garlic powder, salt, and pepper.
Brush eggplant with the spice mixture.
Grill on medium-high heat for 4-5 mins per side.
Serve with lemon juice and parsley.
Sweet and Smokey Peaches
Halve ripe but firm peaches and remove the pits.
Brush the cut sides of the peach halves with olive oil or melted butter.
Grill for about 3-4 minutes on a medium-high heat, cut side down, until grill marks appear and the peaches are slightly softened.
If desired, brush the grilled peaches with honey and sprinkle with a bit of ground cinnamon (it’s to die for)
Serve warm with a scoop of vanilla ice cream or a dollop of Greek yogurt!
